Expertise

Where Experience Meets Innovation.

From product development and formulation to equipment evaluation and performance testing, Chef Billy brings decades of hands-on experience to every challenge. Whether the goal is to create something new or improve what already exists, the focus is always on finding what works.

Every decision begins with the finished product in mind. The ingredients, equipment, and process must serve the result, not dictate it.

01

Dough & Recipe Development

At the foundation of exceptional pizza is an understanding of dough that extends far beyond a list of ingredients.

Chef Billy develops original dough formulations from the ground up, selecting ingredients, designing fermentation approaches, and building recipes around the specific characteristics a client needs. That might mean a particular texture, a specific shelf life, a production method that has to work at scale, or a flavor profile that has to be consistent across every batch.

He also works with existing recipes that are not performing as intended, identifying what is wrong, testing alternatives, and developing a more effective approach. Sometimes the problem is the formula. Sometimes it is the process. Often it is both.

Every formulation is developed through hands-on testing rather than theoretical adjustment. The goal is a recipe that works reliably in the conditions where it will actually be used, not just in an ideal test environment.

Equipment & Technology Evaluation

The right equipment for one product is often the wrong equipment for another.

Chef Billy evaluates pizza ovens, mixers, and production equipment with the same rigor he brings to recipe development, testing performance against specific product requirements rather than relying on manufacturer specifications or general reputation.

For businesses selecting equipment, that means an honest assessment of whether a particular oven or mixer can deliver the result they need, and what trade-offs come with each option. For manufacturers, it means independent evaluation from someone who has worked extensively with the product and can provide a credible, detailed account of how it performs.

The deliverable is a clear, practical recommendation, not a general review, but a specific answer to the question of whether this equipment is right for this application.

Concept & Product Development

Some projects begin with a finished product in mind. Others begin with an idea, a market opportunity, or a question worth exploring.

Chef Billy works with clients at both ends of that spectrum, developing new pizza concepts from the ground up, or taking an existing idea and building it into something that can actually be produced, sold, and scaled.

That process typically involves ingredient selection, dough formulation, equipment evaluation, and production method design, each stage informed by the requirements of the finished product and the realities of how it will be made.

The goal is not a concept that works in theory. It is a product that works in practice, one that can be made consistently, meets the quality standards the client needs, and holds up under real production conditions.

Research, Testing & Product Optimization

Not every project starts from scratch. Some start with a product that is not performing the way it should.

Chef Billy conducts structured research and comparative testing to identify why a product is underperforming and what it would take to fix it. That might involve testing ingredient substitutions, evaluating alternative production methods, or examining how changes at one stage of the process affect the outcome at another.

He also works with clients who want to improve a product that is already working, refining quality, improving consistency, reducing production complexity, or adapting an existing formulation to new requirements.

The deliverable is a practical solution: a refined formulation, a revised process, a clear set of recommendations, and the documentation needed to reproduce the result consistently.
